
well, I thought it was time to share this with you. This is Scott's favorite breakfast that he asks for frequently. It's pretty easy. It's spicy, salty & sweet, soo good.
breakfast skillet.
frozen diced potatoes/hash browns
bacon (1-2 pieces per person)
ground cayenne red pepper
olive oil
eggs (2 eggs per person)
1 bell pepper
sharp cheddar cheese
salt & pepper
*optional: onion
(there aren't really quantities I use, you just dump it all in the skillet depending on how many you're cooking for. Just do what looks good!)
in a large skillet, pour a little olive oil in pan. Cut bacon (the salty part) with scissors into small chunks & place in pan to cook over medium heat. When bacon is close to being cooked, add diced potatoes to pan & a little bit more olive oil.
while potatoes & bacon are cooking, dice a bell pepper (the sweet part), put to side. In a separate small skillet, cook 2 eggs in a large round shape. Season with salt & pepper. Continue cooking eggs for however many people you're serving.
when potatoes & bacon are cooked & beginning to brown, add cayenne pepper to taste (the spicy part) & the chopped bell pepper. Place mixture on your plate to be served, top with cheddar cheese. To finish it off, place the egg on top (the cheese is best between the potatoes & egg so it will melt).
